Easy Stir-Fried Chicken Meal!
Sometimes when I get home and need a quick meal, this is it! This easy stir-fried chicken recipe is my, and will be your new goto quick and flavourful meal. Using fresh ingredients like bell peppers (capsicums), carrots, and vibrant broccoli, it comes together in no time. Get the rice on first, while it’s cooking the diced chicken cooks quickly.
The combination of garlic, ginger, and soy sauce brings out a deliciously rich flavour. It’s perfect for busy weeknights when you need a satisfying meal without spending hours in the kitchen.
Just toss everything in a hot pan, stir-fry, and you’re ready to enjoy a wholesome dinner in under 30 minutes! Serve it over noodles or rice.
Ingredients
- 2 chicken breasts, cubed
- 1 red capsicum (bell pepper), sliced
- 1 yellow capsicum (bell pepper), sliced
- 2 small carrots, thinly sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 6 Spring (green) onions sliced and divided into white and green parts
- 1 cup broccoli florets (raw)
- 1 tbsp fresh ginger, minced
- 1 tbsp soy sauce
- 3 tbsp oyster sauce
- 1 tbsp chili sauce (adjust to taste)
- 2 tsp corn starch (made into slurry with a little water)
- 2 tbsp vegetable or olive oil
- 1 tsp sesame oil
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
- Toasted sesame seeds
Steps
Step 1
Dice the chicken breasts and capsicums, slice the carrots very thinly, chop spring onion and slice onion thinly. Mince the garlic and ginger.
Step 2
In a large frying pan or wok, heat the olive oil over medium-high heat.
Step 3
Add the cubed chicken to the pan. Stir-fry for about 5-7 minutes until fully cooked and no longer pink. Remove the chicken and set aside.
Step 4
In the same pan, add a bit more oil if needed. Add the onion, (white part of spring onion) garlic, and ginger, and cook for 1-2 minutes until fragrant.
Step 5
Add the sliced red and yellow capsicums, carrots, and broccoli. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp. Add a very small splash of water for the steam to help cook.
Step 6
Return the cooked chicken to the pan. Add the soy sauce, oyster sauce, chili sauce. Mix well then add the corn starch slurry. Stir well to coat evenly. Cook for an additional 2-3 minutes, allowing the sauce to heat through. Adjust seasoning if required (Taste first). You can also toss in some of the green part of spring onion, a quick stir or toss and it’s ready!
Step 7
Serve the stir-fry over cooked rice or noodles. Garnish with remaining spring onion and sprinkle sesame seeds.
