To make this recipe, you will need the following ingredients:
Ingredients used to marinate the chicken
- ½ kg chicken boneless, cut into bite-sized pieces
- salt to taste
- 1 tsp paprika powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- ½ tsp black pepper
- 1 tbsp garlic paste
- 2 tbsp tomato paste
- 1 tbsp vinegar
- ½ cup yogurt
- 1 tbsp cooking oil for cooking the marinated chicken
White sauce ingredients
- 1 to 2 tbsp butter
- 1 tbsp all-purpose flour
- 1½ cup milk
- salt to taste
- ¼ tsp black pepper
- ¼ tsp dried oregano leaves
- ½ tsp dried parsley leaves
- mozzarella and cheddar cheese, grated
- fresh coriander leaves, chopped
Method
Give the chicken a marinade.
The chicken needs to be marinated first. The chicken pieces should be placed in a large bowl and seasoned with vinegar, garlic paste, tomato paste, cumin, red chile, and salt. To evenly coat the chicken, thoroughly mix. Add the yogurt next, and stir once more. For optimal results, chill the bowl for at least one hour or overnight, covered with plastic wrap.
marinade for chicken
Cooking the marinated chicken comes next. In a large skillet, heat the oil over high heat for one to two minutes. Cook the chicken pieces on low heat for around 15 minutes, turning them regularly as needed, until they are cooked through and brown. After turning off the flame, set it aside.
White Sauce
Melt the butter in a small saucepan over low heat, then stir in the flour. Simmer until bubbling and smooth, stirring frequently, for a few minutes. Bring to a boil while whisking in the milk gradually. Reduce the heat and simmer, stirring periodically, until the mixture thickens, about 10 minutes. Add oregano, parsley, salt, and pepper for seasoning. After cooking to the desired thickness, extinguish the flame.
Turn the oven on to 180°C (356°F) and lightly oil a baking dish. After transferring the chicken to the baking dish that has been prepared, cover it with white sauce. Once the cheese has melted, sprinkle some more on top and scatter some fresh coriander leaves over it. Bake for a further 10 minutes. It is highly advised that you use the oven for this phase. But, you can cook the chicken with a white sauce drizzle and cheese on top over a regular gas burner if you don’t have an oven. Just be extra careful. To prevent hand burns when cooking, wear kitchen gloves and a clamp.
Enjoy your chicken in the Turkish style with salad, bread, or rice.
